Heavy Metals in Food
In addition to the minerals and trace elements that are useful to our body, there are some heavy metals that are potentially toxic and have legal limits in food.
These are:
Lead (Pb)
Cadmium (Cd)
Mercury (Hg)
Arsenic (As)
Tin (Sn)

Their permissible limits are set by European Regulation 1881/2006/EC “setting maximum permitted levels for certain contaminants in foodstuffs”.
Regulation 333/2007/EC “laying down the methods of sampling and analysis for the official control of the levels of lead, cadmium, mercury, inorganic tin, 3-monochloropropane diol and benzo[a]pyrene in foodstuffs”.
